inI use ground chia seeds(coffee grinder) combined with water In my recipes To substitute for eggs. I use it in yeast breads, quick breads, cakes, cupcakes. It makes a great binder, keeps things moist, & is great healthy choice.
3 Tablespoons warm water
+ 1 Tablespoon ground chia seed
= 1 egg
I came across this chart after I had researched & found a egg substitute that works perfectly in my recipes. It’s a great chart!

inWhat I cook is not all about sugar treats, but it is what people think they will miss out on the most when they find out they have food allergies/intolerance. I’m a mom of a daughter/Make-A-Wish Kid with food intolerance/allergy, I’m an aunt with nieces & nephew with severe food intolerance/allergies, I’m a friend who cooks and delivers gourmet hot lunch to school each day to kids with food allergies/intolerance. I use mostly fresh ingredients, from scratch, with little canned items.
There is no reason why anyone with food intolerance/allergies should miss out on anything! I have created recipes so my daughter, my nieces & nephew, the kids I cook for, family and friends, can have what everybody else has: Mac & Cheese, Chicken Nuggets, Birthday Cake, Cupcakes, etc… AND CAN’T TELL IT’S NOT “TRADITIONAL”
I’m not a business, I’m not a dietitian, like I said I’m a mom, and I am a support for anybody who needs advice with creating, making, & sharing recipes.

This is my Oreo Mocha flavor creation. My fresh brewed “crack coffee” is the liquid for the cake batter. Fresh espresso ground coffee beans are in the frosting.
